Blueberry Salsa
INGREDIENTS
2 cups chopped fresh blueberries
1 cup whole fresh blueberries
1 tablespoon finely chopped jalapeno pepper
1/3 cup chopped red onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup fresh corn kernels
1 fresh lime, juiced
salt to taste
cilantro to taste (optional)
Dressing:
½ teaspoon yellow mustard
⅓ cup olive oil
¼ cup fresh squeezed lime juice
½ teaspoon garlic powder
¼ teaspoon black pepper
salt to taste
INSTRUCTIONS
In a bowl, combine chopped and whole blueberries, jalapeño pepper, onion, red and green pepper, corn kernels, lime juice, and salt.
Allowed to sit for a couple of hours to have the flavors meld before serving.
Combine dressing ingredients. Mix vigorously with a fork or whisk, pour and combine, as desired. Please note: Do not skip the yellow mustard it creates a chemical binding of all the dressing ingredients and is a vital part of this recipe.
