Broccoli and Califlower Cheese Casserole
Prep Time: 10 minutes
Cook Time: 30 - 45 minutes
INGREDIENTS
1 to 2 heads broccoli
1 to 2 large head cauliflower
2 cups Water
Sauce:
½ cup butter
½ cup all-purpose flour
3 to 4 cups milk
2 cup cheddar cheese, grated (more cheese as desired)
¼ teaspoon pepper
½ teaspoon garlic powder
½ teaspoon onion powder
Optional Sauce Ingredients:
salt, to taste, if needed
¼ teaspoon dry mustard powder
sprinkle of hot sauce
olive oil, to taste
Optional Serving:
1 to 2 teaspoon lemon or lime juice sprinkled over just before serving
INSTRUCTIONS
Cut broccoli and cauliflower into sections, as desired, and wash thoroughly.
Preheat oven to 350° F.
Arrange prepared broccoli and cauliflower in baking dish and cover completely with 1 cup of cheddar cheese.
Under medium to low heat add the sauce ingredients except for the lemon or lime juice, if using. Stir sauce gently and constantly, just until the flour is well incorporated and the mixture has thickened.
Pour in the baking dish over the broccoli, cauliflower and 1 cup of cheddar cheese.
Bake in preheated oven covered for 30 to 45 minutes, until vegetables are tender.
Just before serving sprinkle with lemon or lime, as desired (optional)
