Cherry Clafoutis

A clafoutis is a traditional French dessert that’s surprisingly simple to make, given how elegant it looks. With a texture like rich custard and the inclucion of sweet-tart cherries, this dessert is sure to impress.

Cherry Clafoutis

INGREDIENTS

  • 2 cups fresh cherries, pitted

  • 2 tablespoons slivered almonds

  • 3 eggs

  • ¾ cup sugar

  • 1 tablespoon brown sugar, packed

  • 1/8 teaspoon salt

  • 1 cup milk

  • ½ teaspoon almond extract

  • 1½ teaspoon vanilla extract

  • Powdered Sugar, for dusting

INSTRUCTIONS

  1. Thoroughly grease and flour a 9x9 baking dish, and preheat oven to 350 degrees F.

  2. In a large mixing bowl, whisk together all ingredients, except for the cherries and almonds, until smooth and airy. Pour batter into the baking dish, and place the cherries and almonds evenly on top of the batter. Bake for 35 - 45 minutes; if the clafoutis browns too quickly, cover with a loose tent of aluminum foil.

  3. Remove when a sharp knife inserted in the center comes out clean. The clafoutis may not be set entirely and will have expanded, it will settle as it cools. Cool on a wire rack, then dust with powdered sugar to finish.
