Fast'n Easy Baked Rigatoni

Prep Time: 10 minutes

Cook Time: 30 minutes


Ingredients

  • 15 ounces milk ricotta cheese

  • 1 large egg

  • 2½ cups shredded mozzarella cheese, divided

  • ¾ cups shredded Parmesan cheese, divided

  • 2 tablespoons chopped fresh basil

  • 1 teaspoon Italian seasoning

  • 16 ounces rigatoni pasta, cooked

  • 32 ounces marinara or meat sauce, as desired

  • Meat or sausage, optional

  • Dash of crushed red pepper flakes, optional

Instructions

  1. In a medium bowl, mix together the ricotta, egg, 1 cup mozzarella cheese, ½ cup Parmesan cheese, basil, Italian seasoning, and crushed red pepper flakes, if using. Season with salt and pepper.

  2. Layer ingredients by adding sauce to a large baking pan (or several mini paking dishes), then layer with ricotta mixture.

  3. Layer cooked pasta over the ricotta layer, then add the remaining tomato sauce over the pasta.

  4. Finish with a thick layer of parmesan and mozzarella cheeses.

  5. Bake for 25 to 30 minutes or until cheese is golden brown and the tomato sauce is bubbly. Remove from the oven and let sit for 5 minutes. Garnish with fresh basil, if desired, and serve warm.
