Quick'n Easy Apple Cake

INGREDIENTS:

  • 3-4 medium apples, peeled and diced

  • 1 cup of heavy cream

  • 2 eggs

  • ¼ cup sour cream

  • 1 teaspoon vanilla extract

  • 1 cup sugar

  • 2 cups of self-rising flour (WhiteLily flour recommended)

  • 1-2 teaspoons ground cinnamon

  • ½ teaspoon allspice


optional ingredients

  • 1 tbsp lemon juice

  • ½ tsp grated lemon zest


INSTRUCTIONS:

  1. Mix flour, cinnamon and allspice together, set aside.

  2. Prepare a square or round baking pan with butter or cooking spray, set aside. Please note that parchment paper in the bottom of the pan, is optional, but highly recommended.

  3. Peel and dice apples, setting the chunks, fully covered, in a container of cold water, set aside.

  4. Preheat oven to 325 degrees.

  5. In a medium to large mixing bowl add sour cream and sugar. Stir or beat vigorously until well blended.

  6. Add eggs and vanilla continuing to stirring or beating until fully incorporated.

  7. Add heavy cream stir well until all the liquids are completely blended.

  8. Add flour mixture stirring gently until batter is completely smooth.

  9. Add diced apples to the batter, mix gently to fully combine.

  10. Pour batter into prepared the baking pan.

  11. Bake at 325 for one hour or until a toothpick inserted in the center comes out clean.

Create a truly moist and delicious cake by covering the cake directly from the oven. This trick holds the steam (moisture) inside the cake. Allow the cake to cool in the pan, well covered. Cooling a cake in this manner allows the cake to hold onto the moisture that is created during the baking process.
